No, only if you terminate the instance is it destroyed. You can
start/stop to your hearts content without losing your instance/data. I
use two instances regularly, one is my wiki and ticketing system, with
associated database, the other is a RHEL instance that I bring up and
down for various testing purposes.

Using different options with AWS, not going to go into that here, you
can definitely ensure you can keep your instance and it's data.
