This was true until recently. The Red Hat training curriculum undergoes
periodic review, in no small part due to the release of new major versions.
The RHEL 5 classes had a stronger focus on GUI tools than (most) of the
current crop of RHEL 6 classes. The classes are all being rewritten for
RHEL 7, and I expect to see even less GUI content.
Additionally, the introductory level Red Hat classes (RHCSA) had a much
higher focus on GUI tools than the advanced classes. These introductory
classes were specifically courting admins from other OSes where GUI
tools are dominant, so Red Hat training felt it made sense to ease the
transition.
This is also being revamped in newer classes. There are now 3 levels of
introductory classes. The first level is for brand new admins, and
those transitioning from other OSes.

The second level is the exact same content as the first level, but
without the GUI.

I've taken a number of classroom trainings from Red Hat and have always
felt it was a worthwhile use of time and money.
